mr.broccoli shows you the best recipes

Food expert and fitness fan Christian Wenzel, better known as mr.broccoli, shows you in exclusive recipes how you can integrate matcha into your everyday life and what you need to know about the green tea.

The basics: What is matcha?

The Japanese word matcha translates as "ground tea" and is more than just a trendy drink. There's a centuries-old tradition behind the production of this green powder.

Mr. Broccoli, who studied the superfood intensively on his trip to Japan, explains: "To produce matcha, the leaves of the Camellia Sinensis plant are specially shade-grown to maximize their unique flavor and valuable ingredients such as antioxidants and vitamins ."

To produce this green tea, the deep green leaves of the Camellia sinensis plant are first steamed, then dried, and finally ground into a fine powder. This process ensures its distinctive consistency and intense flavor. This is a precise and time-consuming process that begins with the careful harvesting of the leaves . Before harvesting, the tea bushes are shaded. This causes the plant to produce more chlorophyll and theanine – these substances give the final product its characteristic bittersweet taste and vibrant green color.

In his exclusive videos and recipes, mr.broccoli shows you how to perfectly prepare the green powder and use it in various creations – from classic matcha tea to innovative smoothie and latte recipes.

Preparing Matcha: The Basics

To prepare matcha tea, simply stir the green matcha powder into hot water, whisk the mixture into a frothy consistency using a small bamboo whisk or a whisk, and then refine your tea with other ingredients as desired. Unlike other types of tea, the ground tea leaves remain in matcha drinks and are absorbed into your body along with their active ingredients .

Particularly popular is the Matcha Latte , a creamy drink that harmoniously combines the natural bitterness of green tea with a sweet milk substitute or honey. Matcha's flavor is unique—it's both tart and sweet, with a subtle umami note that works wonderfully in many drinks and dishes .

The effect: What substances does matcha tea contain and is the drink healthy?

Because matcha is a green tea, it naturally contains caffeine . The concentration of this naturally occurring substance is higher than in other green teas due to the special production process of matcha powder.

The caffeine content of matcha varies between 18.9 and 44.4 mg/g, depending on the harvest time and plant age. For one cup of matcha, you need about 1 to 2 g of matcha powder.¹ For adults without health problems , 400 mg of caffeine per day is considered safe.

The advantage over coffee drinks: When the caffeine comes from green tea preparations, the body absorbs it more slowly. The effect develops gradually , but the "caffeine kick" lasts longer.³ This is why many people turn to matcha tea as an alternative to espresso, cappuccino, and the like.

Matcha can be found not only in teas and beverages, but also in various foods , from desserts to baked goods to iced treats.

Health benefits of green matcha tea

Research into the health benefits of matcha tea is still in its early stages. It's not yet possible to say with certainty what specific impact it has on your well-being.

Interestingly, drinking green tea, such as matcha, also plays a significant role in the Okinawa region of Japan. Okinawa is one of the so-called "Blue Zones," where people live particularly long lives. What's particularly striking is that the oldest people in the world live here—especially women—and green tea is an important part of their diet.

Some researchers, such as scientists at Harvard University, suggest that daily consumption of one or two cups of matcha tea could have a positive impact on the cognitive functions of older women and the gut microbiome.⁶

Why does the caffeine in matcha taste different than in coffee

One reason why caffeine in matcha works differently than in coffee is the catechin it contains. It is a secondary plant compound and has an antioxidant effect. This means that catechins

  • can protect your cells from free radicals
  • influence, among other things, the aging process and
  • could contribute to the maintenance of the cardiovascular system⁴

In addition to catechins, green teas such as matcha contain the amino acid L-theanine, which may have a stress-reducing effect ,⁵ as well as various micronutrients such as B vitamins, iron and magnesium.

Tip: If you use high-quality matcha powder, you can benefit from the effects of the ingredients.

About 400 years later, matcha finally became an important part of the Japanese tea ceremony . Mr.broccoli says:
