Our premium Spanish organic extra virgin olive oil comes from Finca Tindávar, a family-run olive grove in Yeste, Albacete, in the heart of the Sierra del Segura. At an altitude of approximately 700 meters, our single-variety Picual olives grow on 16 hectares of pristine natural landscape, nestled within the Natura 2000 protected area, renowned for its rich flora and fauna. The olives are hand-picked, gently harvested, and cold-pressed. The processing into extra virgin olive oil is purely mechanical, without any chemical treatment. Regular residue testing ensures the oil's high purity and quality. This meticulous origin and processing form the basis for a natural olive oil of exceptional quality.




We rely on holistic cultivation methods that respect the soil, the plants, and the environment. We consider natural rhythms, lunar cycles, and seasonal influences to optimally manage planting, care, and harvesting. In this way, we promote healthy soil life, maintain soil fertility, and produce aromatic, high-quality olives. Our olive oil comes from 100% certified organic farming, is certified according to EU organic standards, and is regularly tested for quality and purity. The result is an oil that not only impresses with its taste but also provides valuable nutrients.


Our premium organic extra virgin olive oil is rich in a total of 11 valuable fatty acids. Fatty acids are essential building blocks of our bodies: they are a key component of cell membranes, provide energy, and play an important role in various metabolic processes. A distinction is made between saturated, monounsaturated, and polyunsaturated fatty acids. Olive oil, in particular, contains many monounsaturated fatty acids, especially oleic acid (an omega-9 fatty acid), which contributes to a balanced fatty acid profile. Fatty acids are therefore of great importance for a varied and balanced diet.


Our high-quality premium organic extra virgin olive oil also impresses with its fruitiness, clarity, and an exceptionally high polyphenol content of over 600 mg/kg. Polyphenols are secondary plant compounds that shape the sensory characteristics of olive oil and are responsible for its characteristic, slightly peppery note – a typical sign of freshness and quality. Due to this high polyphenol content, the oil is ideal for raw consumption, for example in salads, cold dishes, or for finishing dishes after cooking to best preserve its valuable nutrients.

This product is free from allergens (gluten, lactose, etc.) and manufactured in accordance with Regulation (EU) No. 1169/2011, Annex II .

Dosage:
Take 1–2 tablespoons daily as part of a balanced diet. Ideal for enhancing salads, cold dishes, or for gentle heating.

Notes:
Store tightly closed in a cool, dry place away from light. Once opened, consume within a few months. Ideal for refining salads, cold dishes, or for gentle heating – do not heat above 180°C.
Cloudiness or deposits are natural occurrences and do not represent a quality defect.

The slightly spicy aftertaste is typical of high-quality, polyphenol-rich olive oils.

What does “extra virgin olive oil” actually mean?

“Extra virgin olive oil” is the highest quality level among all olive oils. The term "native" means that the oil exclusively by mechanical means– without chemical additives or refining – from fresh, cold-pressed olives is won.

The addition "extra" indicates a particularly high-quality oil with very low acidity, impeccable taste and optimal freshness. Only oils that contain these strict quality criteria may not be designated “extra virgin olive oil” carry.

Why are fatty acids important?

Fatty acids are essential building blocks of our diet and perform numerous vital functions in the body. They are component of every cell membrane, energy supplier and play a central role in many metabolic processes.

A distinction is made between saturated, monounsaturated and polyunsaturated fatty acids– each of these groups fulfills different functions in the organism. A balanced ratio these fatty acids support cell health, the cardiovascular system and healthy, varied diet.

What is special about the processing?

Our Premium Organic Extra Virgin Olive Oil is produced using a particularly gentle cold process – in harmony with nature and with the utmost respect for raw materials, the environment and nutrients.

We are a family-run farm that has been dedicated to olive cultivation in the mountains of the Spanish hinterland for generations. Our single-variety Picual olives grow at an altitude of around 700 meters in the Sierra del Segura (Yeste, Albacete), nestled within a protected natural landscape of the Natura 2000 network, far from industrial pollution.

The olives are harvested early and carefully by hand, and immediately afterwards cold-extracted at temperatures below 27°C. Using modern centrifugation and separation techniques, the oil is gently extracted from the pulp – entirely without heat, pressure, or chemical additives. This process optimally preserves the natural aromas, the delicate monounsaturated and polyunsaturated fatty acids, and the high content of antioxidant polyphenols.

Our cultivation methods are deliberately designed to be close to nature: they promote a living, microbiologically active soil, protect the organic matter, preserve the diverse vegetation, and prevent erosion. This healthy soil structure is the basis for the exceptional quality of our olive oil.

The result is a natural, mildly fruity olive oil of the highest nutritional quality – with an excellent sensory and organoleptic profile. A food that reflects the Mediterranean lifestyle, nourishes and cares for the body, and is completely free of toxic residues.

Is the olive oil free of pollutants and heavy metals?

As a certified organic product, our olive oil undergoes regular quality and residue checks by independent testing laboratories. These checks include testing for heavy metals, pesticides, and other contaminants.

The olives come from a protected, pristine mountain region in the Spanish hinterland, far removed from industry, traffic, and intensive agriculture. Our cultivation consciously adheres to particularly strict, nature-oriented principles that go significantly beyond the legal organic standards. We completely forgo chemical-synthetic pesticides, herbicides, artificial fertilizers, and other external fertilizers, relying instead on natural cycles in harmony with the soil, environment, and ecosystem.
Our olive groves are located in the heart of a designated nature reserve (Natura 2000 region) and are part of a sensitive habitat for wildlife and birds. This unique environment, combined with sustainable farming practices, forms the basis for a particularly pure and authentic product.
Each batch of our olive oil is regularly tested by independent laboratories. Only oils that meet all test parameters are bottled.
